What is Gellan Gum?
Gellan gum is a water-soluble polysaccharide produced through bacterial fermentation. It is widely used in the food industry as a gelling agent, stabilizer, and thickener. Gellan gum consists of repeating units of glucose, glucuronic acid, and rhamnose. After fermentation, it can be processed into two main forms: high-acyl gellan gum, which produces soft and elastic gels, and low-acyl gellan gum, which creates firm and brittle gels. According to the U.S. Food and Drug Administration (FDA), gellan gum is approved to be used in food. It has also been evaluated by relevant regulatory authorities like JECFA, EUR-Lex, ECHACHEM, and WHO. Gellan gum comes in two main forms: low acyl gellan gum and high acyl gellan gum, each offering distinct characteristics and applications.

Low Acyl Gellan Gum
LA Gellan Gum is known for producing firm, brittle gels with excellent heat stability. Its key features include:
- Texture: Creates clear, rigid gels with a clean break.
- Heat resistance: Maintains gel structure at high temperatures.
- pH stability: Performs well in acidic conditions.
- Low use levels: Effective at concentrations as low as 0.05%.
Applications of low acyl gellan gum include:
- Water gel desserts.
- Dairy alternative products.
- Structured liquids in personal care items.
- Pharmaceutical capsules and controlled-release formulations.
High Acyl Gellan Gum
HA Gellan Gum forms soft, elastic gels with a more natural mouthfeel. Its characteristics include:
- Texture: Produces soft, flexible gels with good suspension properties.
- Cold-setting: Can form gels without heat.
- Freeze-thaw stability: Maintains structure through temperature cycles.
- Synergy with other gums: Enhances properties when combined with other hydrocolloids.
Applications of high acyl gellan gum include:
- Dairy products like yogurt and ice cream.
- Plant-based milk alternatives.
- Fruit preparations and jams.
- Sauces and dressings as a stabilizer.
CAS No.: 71010-52-1
According to the American Chemical Society, the CAS number of gellan gum is 71010-52-1.
E number: E418
According to the European Food Safety Authority (EFSA), gellan gum is designated as food additive E418. Gellan gum powder is a versatile food additive and industrial ingredient due to its unique properties.

Gellan Gum Prices (USD/Kg)
Food Grade Gellan Gum Price (high acyl or low acyl)
| Volume | Unit Price | Shipment |
| 50g | 15 USD | Express |
| 500g | 45 USD | Express |
| 1Kg | 75 USD /Kg | Express |
| 10Kg | negotiable | Express |
| 100Kg-Above | negotiable | Express / Sea |
Gellan gum prices have been fluctuating in recent years due to supply chain disruptions and varying demand. Current market quotations for food-grade gellan gum are different, depending on the quality and quantity ordered. The total landed cost, including the product value and all shipping expenses, can vary widely. By carefully considering all these factors, gellan gum buyers can make more informed decisions.
Furthermore, the above price quotations of gellan gum, especially for small orders, do not include the express shipping fee. The reason is that the shipment cost of gellan gum powder may exceed the value of the sample. But the bulk wholesale gellan gum prices will be much lower than those of small orders. Gellan Gum Powder Used in Food
A Highly Aerated Milk Candy – Formulation by Weight
The preparation steps:
(1) The equipment used for boiling the maltose syrup-white sugar-water mixed solution is a constant temperature oil bath pot, the temperature is set to 145°C, and when the temperature rises to the set temperature, the stainless steel container containing the syrup-white sugar-water mixed solution is heated in the oil bath pot. When the solution boils, the timing starts, and the time is 10 minutes, and the heating can be stopped.
(2) 15 parts of gelatin are soaked in 60 parts of water, and after fully swelling, they are bathed in a 65°C water bath pot for 30 minutes. 4 parts of gellan gum powder are dispersed in 50 parts of water using a magnetic stirrer. Finally, the gelatin that has been bathed in water is immediately poured into the gellan gum aqueous solution and magnetically stirred and mixed. The temperature is set to 65°C and the time is 30 minutes. Hydrate overnight.
(3) Mix the boiled sugar paste (1) and 0.8 parts of the compound colloid (2), 4 parts of anhydrous butter, and 5 parts of milk powder with a stirring device, and fill with nitrogen while stirring for 5 minutes.
(4) Pour the stirred fluid material into the mold, place it in a 60°C water bath, and put it into the vacuum ultrasonic equipment with a vacuum degree of 0.1MPa. First, set the power of the vacuum ultrasonic equipment to 900W, adjust the power to 1200W after 5 minutes of ultrasonication, adjust the power to 1500W after 5 minutes of ultrasonication, and end the ultrasonication after 5 minutes.
(5) Then perform infrared radiation drying, set the temperature to 30°C, and the time to 30 minutes.
(6) Form and demold to obtain the finished high-aeration milk candy.
In conclusion, gellan gum E418 continues to gain popularity due to its multifunctional properties and the increasing demand for plant-based ingredients in various industries. As a bulk gellan gum manufacturer and supplier in China, Sinofi sells different grades of high-acyl and low-acyl gellan gum at wholesale prices to large manufacturers and small customers worldwide.
