What is Nisin?
Nisin is a naturally occurring antimicrobial peptide produced by certain strains of the bacterium Lactococcus lactis during fermentation. It functions as a bacteriocin, meaning it inhibits the growth of other bacteria, particularly gram-positive organisms that can cause food spoilage and foodborne illness. Nisin is a polypeptide containing 34 amino acids. It has gained significant importance in food preservation and other applications due to its effective antimicrobial properties and safety profile. According to the U.S. Food and Drug Administration (FDA), nisin is approved to be used in the food industry. Nisin has also been evaluated by major regulatory bodies like JECFA, ECHACHEM, and WHO.

CAS No.: 1414-45-5 or 977127-33-5

Nisin prices have seen significant fluctuations in recent years due to changing market dynamics and growing demand across various industries. The market demonstrates complex pricing dynamics influenced by multiple factors across the supply chain.
They vary significantly based on concentration levels and quality grades. Standard food-grade nisin (2.5% concentration, 1000 IU/mg) typically ranges from $80 to $150 per kilogram in the wholesale market. Higher concentrations command premium prices. These prices reflect typical market conditions but can fluctuate based on various factors.
Key Price Determinants
Production Costs
Manufacturing costs significantly impact nisin pricing, primarily driven by:
- Fermentation process expenses.
- Raw material costs, particularly growth media components.
- Energy consumption in production facilities.
- Quality control and testing procedures.
- Packaging and storage requirements.
Market Demand Factors
Price variations often correlate with:
- Growing demand in food preservation applications.
- Expansion of clean-label product segments.
- Increased adoption in emerging markets.
- Seasonal fluctuations in food production.
- Regional regulatory changes.
Supply Chain Influences
Supply chain dynamics affecting prices include:
- Transportation and logistics costs.
- Storage and handling requirements.
