A Special Oil for High-Temperature Frying – Formulation by Weight
The special oil for high-temperature frying is prepared from soybean oil, mixed oils, and additives, wherein the mixed oils are palm olein and canola oil with IV 69-71. The additives are dimethylpolysiloxane (E900) and TBHQ (E319). The mass ratio of soybean oil, palm olein, and canola oil is 7.5: 1: 1.5, and the amount of TBHQ is 0.02 wt% of the total amount of oils. The amount of dimethyl polysiloxane is 0.2 wt% of the total amount of oils.
The production method includes the following steps:
Step 1. Heating the mixed oils to 65±5°C, adding additives, stirring at 65°C for 30 minutes to mix evenly, and the stirring frequency is 40 rpm;
Step 2. Spraying the material obtained in step (1) into soybean oil at 50±5°C, stirring while spraying, and controlling the oil temperature to 50±5°C, and the stirring frequency is 35rpm and the total stirring time is 1.5h, and the spraying is completed within 1.5h in five times, and the interval time between adjacent sprayings is at least 10min. After spraying is completed, stir it until smooth, then stop stirring, and the mixture is filtered and allowed to stand at 30°C to obtain the product.
